Sponge Rasgulla Recipe | अब थैली वाले दूध से बनाये परफेक्ट रसगुल्ला और रसमलाई भी | Rasmalai Recipe

* Toned Milk (दूध)1/2 liter
* Lemon juice (निम्बू का रस) - 1/2 lemon juice
* Water (पानी) - more 1 liter
* Sugar (चीनी) - 200 grams / 1 bowl
* All Purpose flour (मैदा) - less 1/2 tsp
* Saffron (केसर) - Some

* Full cream milk (फुल क्रीम दूध)- 1 liter
* Sugar (चीनी) - 4 tbsp
* Cardamom (इलायची) - some
* Saffron (केसर) - some
* Dry Fruits (सूखे मेवे) - some


Take some Toned Milk or Cow Milk. In a pan, put some Milk and boil it. When the Milk starts boiling turn off the flame and stir it continuously.
Take some Lemon Juice, add some Water in it and then put the Lemon and Water mixture in the boiled Milk gradually to curdle it.
Then take a big bowl, keep a cotton cloth on it and put the curdled Milk (Chhena) in it and put some Water on it then tie it tightly for at least 2 hours. Take out the Chhena in a plate and mash it properly. Then put some All Purpose Flour in it and knead it for 5-7 mins. Make some small balls of it.
For Sugar Syrup, put some Water and Sugar in a pan and cook it well by covering it and when it starts boiling put the Chhena Balls (Rasgullas) in it then cover it and cook it for 5-6 mins.
After 5 mins, stir the Rasgullas carefully and again cover it and cook it for 15 mins.
Then put the Rasgullas in a bowl for 1-2 hours till it comes at room temperature. Put some Saffron Leaves on the Rasgullas then keep it in the fridge for 2-3 hours.
For Kheer, boil some Full Cream Milk to make it thick then put some Sugar, Saffron Leaves and Cardamom Powder in it and boil it once again.
Then put the ready Rasgullas in the boiling Milk and let the Milk boiling for 5-7 mins and stir it carefully and turn off the flame.
Let them to come at room temperature, garnish some chopped Dry Fruits on them and then keep them in the fridge.
In this way, Rasgullas and its Kheer will get ready to serve.
