INGREDIENTS:
FOR VADA:
* Idli/Dosa Batter (इडली/डोसा बैटर) - 4 serving spoons
* Gram Flour (बेसन) - 2 tbsp
* Cumin seeds (जीरा)
* Salt (नमक) - as per taste
* Asafoetida (हींग) - 1 pinch
* Green chili (हरी मिर्च) - some
* Ginger (अदरक) - some
* Oil (तेल) - for greasing
* Eno (इनो) - 1/4 tsp

FOR SERVING:
* Lukewarm water (गुनगुना पानी)
* Salt (नमक)
* Asafoetida (हींग)
* Curd (दही)
* Black Salt (काला नमक)
* Sweet chutney (मीठी चटनी)
* Green chutney (हरी चटनी)
* Black pepper (काली मिर्च)
* Roasted Cumin Powder (भुना जीरा पाउडर)
* Chili powder (लाल मिर्च पाउडर)
* Coriander leaves (धनिया पत्ती) - for garnishing

RECIPE:

In a bowl, take some Idli/Dosa batter. Mix it well then put some Gram Flour, Cumin Seeds, Salt, Asafoetida, chopped Green Chilies and Grated Ginger. Mix them all and then put some Eno Powder in it to make the Vadas fluffy.
Keep the Idli Pot on the flame, put some Water in it for boiling and place a strainer plate in it.
Grease some Oil in the small steel bowls, put the Vada Batter in the bowls and keep the bowls in the Idli Pot and cover it. Give them steam for 10-12 mins.
Check them with a tooth pick and turn the flame off. Let the Vadas in the Idli Pot for 2 mins and then take out them on a plate and let them for cooling down.
Filter the Curd in a bowl with a strainer or with a thin cotton cloth to make the Curd smooth.
In a bowl, take some Lukewarm Water. Put some Salt, Asafoetida and the Vadas in the Water bowl for 10 mins. Then take out them and squeeze them.
Take the filtered and whisked Curd, put some Black Salt in it and mix it well.
In a plate, put some Curd then put the Vadas on it then put some more Curd on the Vadas.
Put some Sweet and Sour Chutney (Sauce), Green Chutney, Black Pepper Powder, Roasted Cumin Powder, Red Chili Powder and garnish some Coriander Leaves.
In this way, very Soft and Fluffy Dahi Vadas will get ready to serve.
