INGREDIENTS:
FOR FILLING:
* Potato (आलू) - 2 boiled
* Black gram (काले चने) - some boiled
* Green chili (हरी मिर्च)
* Coriander leaves (धनिया पत्ती)
* Lemon juice (निम्बू का रस) - 1-2 tbsp
* Chat masala (चाट मसाला)
* Sweet sauce (मीठी चटनी)

FOR GREEN CHUTNEY PASTE:
* Coriander leaves (धनिया पत्ती) - 2 bunch
* Mint leaves (पुदीना पत्ती) - 1/2 bunch
* Green chili (हरी मिर्च) - 3
* Ginger (अदरक) - 1 piece
* Lemon juice (निम्बू का रस) - 4 tsp
* Black Salt (काला नमक) - 1/2 tsp
* Salt (नमक) - 1/2 tsp
* Roasted cumin powder (भुना जीरा पाउडर) - 1/2 tsp
* Chili powder (लाल मिर्च पाउडर) - some
* Water (पानी) - some

1. FOR KHATTA PANI:
* Water (पानी)
* Green chutney paste (हरी चटनी)
* Salt (नमक)
* Chaat masala (चाट मसाला)
* Raita bundi (रायता बूंदी)
* Tamarind Pulp (इमली का पल्प)

2. FOR GARLIC/LEHSUN KA PANI
* Garlic (लहसुन) - 6-7 cloves
* Green garlic (हरी लहसुन) - some
* Water (पानी) - 1 glass
* Green chutney paste (हरी चटनी)
* Black Salt (काला नमक)
* Salt (नमक)
* Chat masala (चाट मसाला)
* Red chili powder (लाल मिर्च पाउडर)
* Lemon juice (निम्बू का रस)
* Raita bundi (रायता बूंदी)

3.FOR RED/LAAL PANI
* Water (पानी) - 1 glass
* Sugar (चीनी) - 2-3 tbsp
* Lemon juice (निम्बू का रस) - 2-3 tbsp
* Black salt (काला नमक)
* Salt (नमक)
* Chat masala (चाट मसाला)
* Roasted cumin powder (भुना जीरा पाउडर)
* Ginger powder (सौंठ पाउडर)
* Kashmiri Red Chili (कश्मीरी लाल मिर्च)
* Raita bundi (रायता बूंदी)

4. FOR ORANGE PANI:
* Orange juice (ऑरेंज जूस) - 1/2 cup
* Water (पानी) - 1/2 cup
* Lemon juice (निम्बू का रस)
* Red chili powder (लाल मिर्च पाउडर)
* Black salt (काला नमक)
* Ginger powder (सौंठ पाउडर)
* Chat masala (चाट मसाला)
* Roasted cumin powder (भुना जीरा पाउडर)
* Salt (नमक)
* Mint leaves (पुदीना पत्ती)
* Raita bundi (रायता बूंदी)

5. FOR IMLI KA PANI:
* Tamarind Pulp (इमली का पल्प) - 1/2 cup
* Water (पानी) - 1 glass
* Red chili powder (लाल मिर्च पाउडर)
* Ginger powder (सौंठ पाउडर)
* Black Salt (काला नमक)
* Salt (नमक)
* Roasted cumin powder (भुना जीरा पाउडर)
* Chat masala (चाट मसाला)
* Green chutney paste (हरी चटनी) - 1/2 tsp
* Raita bundi (रायता बूंदी)
* Kashmiri Red Chili powder (कश्मीरी लाल मिर्च)

6. FOR HING KA PANI:
* Sweet sauce (मीठी चटनी) - 4 tbsp
* Asafoetida (हींग) - less then 1/4 tsp
* Ginger powder (सौंठ पाउडर) - less then 1/4 tsp
* Black pepper powder (काली मिर्च पाउडर)
* Chat masala (चाट मसाला) - 1 tsp
* Roasted cumin powder (भुना जीरा पाउडर) - 1/2 tsp
* Black salt (काला नमक)
* Salt (नमक)
* Raita bundi (रायता बूंदी)
* Lemon juice (निम्बू का रस)

RECIPE:

For filling, Chop some Boiled Potatoes, put some Boiled Black Gram, some Green Chilies, Coriander Leaves, Lime Juice, Chaat Masala and some Sweet Chutney in it. Mix them all and keep the filling aside.
Then make a Paste/Green Chutney, take some Coriander Leaves, Mint Leaves, Green Chilies, Ginger, Lime Juice, Black Salt, Salt, Roasted Cumin Powder, Red Chili Powder and some Water and grind them all and make a thick paste.
6 flavourful Panipuri’s Pani:-
1. Khatta Pani (Sour in taste): In a jug, put some Water, some Green Chutney, Salt, Chaat Masala, Tamarind Pulp and some Boondi in it. Khatta Pani will get ready.
2. Garlic Flavour: In a mixer jar, put some Garlic and Water and grind it then filter it and put it in the jug. Put some Water, Green Chutney, Black Salt, Salt, Chaat Masala, Red Chili Powder and some Lime Juice in it. Garlic Pani will get ready.
3. Red Pani: In a jug, put some Water and Sugar. Dissolve the Sugar and then put some Lime Juice, Black Salt, Salt, Chaat Masala, Roasted Cumin Powder, Ginger Powder, Kashmiri Red Chili Powder and some Boondi in it. The very tasty Red Pani will get ready.
4. Orange Flavour: In a jug, put some fresh Orange Juice, Water, Lime Juice, Red Chili Powder, Black Salt, Ginger Powder, Chaat Masala, Roasted Cumin Powder and some Salt. Mix them all then put some Boondi and crushed Mint Leaves in it. The Orange flavoured Pani will get ready in this way.
5. Tamarind Flavour: In a jug, put some Tamarind Pulp, some Water, Red Chili Powder, Ginger Powder, Black Salt, Salt, Roasted Cumin Powder, Chaat Masala, Green Chutney, Kashmiri Red Chili Powder and some Boondi in it. Tamarind Pani will get ready.
6. Asafoetida flavour: In a jug, put some Water, Sweet Chutney, Asafoetida, Ginger Powder, Black Pepper Powder, Roasted Cumin Powder, Black Salt, Salt, Lime Juice and some Boondi in it.
In this way, very tasty and hygienic Panipuri’s 6 flavourful Pani will get ready.
