INGREDIENTS:
FOR MASALA:
* Dry Whole Red Chili (सूखी साबुत लाल मिर्च) - 4
* Mustard Seeds (राइ) - 1 tsp
* Coriander seeds (सूखा साबुत धनिया) - 2 tsp
* Cumin seeds (जीरा) - 1 tsp
* Fennel seeds (सौंफ) - 1 tsp
* Fenugreek seeds (मेथी दाना) - 20 pieces
* Black pepper seeds (काली मिर्च) - 10-12 pieces
* Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च पाउडर) - 1/2 tsp
* Garam Masala (गरम मसाला) - 1/4 tsp

FOR PASTE:
* Capsicum (शिमला मिर्च) - 2
* Tomatoes (टमाटर) - 3

FOR GRAVY:
* Oil (तेल) - 2 -2.5 tbsp
* Cumin seeds (जीरा) - 1/2 tsp
* Asafoetida (हींग) - 1-2 pinch
* Dry Whole Red Chili (साबुत लाल मिर्च) - 2
* Nigella seeds/Onion seeds (कलोंजी) - 1/4 tsp (optional)
* Ginger (अदरक) - 1 tsp
* Green chili (हरी मिर्च) - 2
* Turmeric powder (हल्दी पाउडर) - 1/2
* Kashmiri red chili powder (कश्मीरी) - 1
* Water (पानी) - some
* Curd (दही) - 1/2 cup
* Gram Flour (बेसन) - 1 tbsp (roasted)
* Salt (नमक) - as per taste
* Sugar (चीनी) - 1-1.5 tbsp
* Cottage cheese (पनीर) - 250 grams
* Coriander leaves (धनिया पत्ती) - for garnishing

RECIPE:

For Achar Masala, take some Dried Whole Red Chilies, Mustard Seeds, Coriander Seeds, Cumin Seeds, Fennel Seeds and Fenugreek Seeds and roast the Spices. Take out some of the Red Chilies for using them while making Gravy.
Keep the roasted Spices for cooling down. Then put all the Spices in the mixer jar, also put some Black Pepper, Kashmiri Red Chili Powder and some Garam Masala then grind them all coarsely.
Chop some Capsicum and Tomatoes and grind them to make a paste. Cut the Cottage Cheese in Cubes.
Take a pan, put some Oil, Cumin Seeds, Asafoetida, Dried Whole Red Chilies, Nigella/Onion Seeds, some finely chopped Ginger and Green Chilies in it. Then put some Turmeric Powder, Kashmiri Red Chili Powder and some Water and then put some Achar Masala and the Tomato and Capsicum Paste and let it to be cooked for 4-5 mins on medium flame till it releases Oil.
Take some Curd in a bowl, put some roasted Gram Flour and some Achar Masala in it and mix them all and put the Curd in the pan. Then put some Salt, Sugar and Cottage Cheese Cubes in the gravy. Cook it for 2-3 mins and then put some Water in it and cook it for some more time. Then turn off the flame and the Achari Paneer will get ready. Garnish it with some Coriander Leaves and serve it.
