INGREDIENTS:
* Wheat flour (गेहूं का आटा) - 1 cup
* Gram Flour (बेसन) - 1/4 cup
* Carom seeds (अजवाइन)
* Spinach (पालक)
* Fenugreek leaves (मेथी)
* Coriander leaves (धनिया पत्ती)
* Green chili (हरी मिर्च)
* Ginger (अदरक)
* Lemon juice (निम्बू का रस) - 1/2 tsp
* Salt (नमक) - as per taste
* Red chili powder (लाल मिर्च पाउडर) - 1/2 tsp
* Coriander powder (धनिया पाउडर)- 1/2 tsp
* Turmeric powder (हल्दी पाउडर) - 1/4 tsp
* Garam Masala (गरम मसाला) - 1/4 tsp
* Baking soda (बेकिंग सोडा) - 1/4 tsp
* Oil (तेल) - 1 tbsp
* Water (पानी) - as required

FOR TADKA:
* Oil (तेल) - 1-1.5 tbsp
* Mustard seeds (राइ) - 1/2 tsp
* Cumin seeds (जीरा) - 1/2 tsp
* Dry Whole Red Chili (सूखी साबुत लाल मिर्च) - 2
* Green chili (हरी मिर्च) - 3-4 chilies
* Curry leaves (करि पत्ता)- some
* Asafoetida (हींग) - 1/4 tsp
* White sesame seeds (सफ़ेद तिल) - 1 tsp
* Kashmiri Red Chili powder (कश्मीरी लाल मिर्च) - 1/2 tsp
* Coriander leaves (धनिया पत्ती) - for garnishing
* Chaat masala (चाट मसाला) - some

RECIPE:

Take a bowl, put some Wheat Flour, Gram Flour, Carom Seeds, some washed and chopped Spinach, Fenugreek Leaves, Coriander Leaves, Green Chilies and some Ginger in it.
Then put some Lime Juice, Salt, Red Chili Powder, Coriander Powder, Turmeric Powder, Garam Masala Powder, Baking Soda and some Oil in it. Mix them all and make dough by adding Water in it. Apply some Oil on the dough and make it smooth. Make the Rolls from the ready dough.
Keep some Water in a pan for boiling, put a strainer on it and grease some Oil on the strainer. Put the Rolls on the strainer and cover them with a lid and give steam to the Rolls for at least 15 mins.
After then, let the Rolls for cooling down and then cut them in small pieces.
For Tadka, take a pan, put some Oil, Mustard Seeds, Cumin Seeds, Dried Whole Red Chilies, Green Chilies, Curry Leaves, Asafoetida, White Sesame Seeds and Kashmiri Red Chili Powder in it, then put the Marwari Gattas in it and turn the flame high and mix them. Put some Coriander Leaves and Chaat Masala on them and let the Marwari Gattas to get crispy. In this way, Marwari Gattas will get ready to serve.
