Veg Jaipuri Recipe | रेस्टोरेंट जाना भूल जायेंगे जब ये सब्जी घर पर बनाएंगे | Mix Veg Recipe

INGREDIENTS:
* Oil (तेल ) - 2 tbsp
* Shah jeera/Caraway seeds (शाह जीरा) - 1/2 tsp
* Ginger (अदरक)
* Green chili (हरी मिर्च)
* Kashmiri Red chili powder (कश्मीरी लाल मिर्च पाउडर) - 1/2 tsp
* Turmeric powder (हल्दी पाउडर) - 1/4 tsp
* Tomato puree (टमाटर की प्यूरी) - 2 tomatoes
* Roasted Cumin Powder (भुना जीरा पाउडर) - 1/2 tsp
* Garam Masala (गरम मसाला) - 1/4 tsp
* Coriander powder (धनिया पाउडर) - 1 tsp
* Chili powder (लाल मिर्च पाउडर) - some
* Gravy (ग्रेवी) - 2 serving spoons
* Cabbage (पत्ता गोभी)
* Carrot (गाजर)
* Capsicum (शिमला मिर्च)
* Cauliflower (फूल गोभी)
* Potato (आलू)
* Peas (मटर)
* Fenugreek seeds (कसूरी मेथी) -some
* Salt (नमक) - as per taste
* Lukewarm water (गुनगुना पानी) - 1/2 cup
* Cottage cheese (पनीर)
* Coriander leaves (धनिया पत्ती) - for garnishing

RECIPE:

Wash and chop some Potatoes, Cauliflower and Carrots. Boil them and keep them in the strainer.
Fry the Cauliflower, Potatoes, Capsicum and Cabbage. Take some Tomatoes, boil them and remove their skin and make the Tomato Puree.
Keep a pan on flame, put some Oil, Caraway Seeds, Ginger, Green Chilies, Kashmiri Red Chili Powder and Turmeric Powder and then put the Tomato Puree in it. Let the Tomatoes to be cooked and then put some Cumin Powder, Garam Masala Powder, Coriander Powder and Red Chili Powder.
When the Tomatoes release Oil, put some Gravy in it.

Turn the flame slow and put chopped Carrots, Peas and the fried Cabbage, Capsicum, Cauliflower and Potatoes in the pan.
Put some Dried Fenugreek Leaves, Salt and put some Lukewarm Water in it and let the vegetables to be cooked on slow flame for 1-2 mins.
Then put the fried or roasted Papads by crushing them in the Mix Veg. Put some grated Cottage Cheese and garnish the Mix Veg with some Coriander Leaves. Turn the flame off and put some fried Cottage Cheese Cubes and the Jaipuri Mix Veg will get ready to serve.
