For Paneer Roll -
* Cottage Cheese(पनीर) - 250 gram
* All Purpose Flour(मैदा) - 2 tbsp
* Black Pepper Powder(काली मिर्च पाउडर)
* Salt(नमक)
* Tomato Ketchup(टमाटर चटनी)
* Chaat Masala(चाट मसाला)
* Coriander Leaves(धनिया पत्ती)

For Paste -
* Oil(तेल) - 1 tbsp
* Cumin Seeds(जीरा) - 1/2 tsp
* Cinnamon Stick(दालचीनी) - 1
* Cloves(लौंग) - 2
* Green Cardamom(छोटी इलाइची) - 1
* Black Pepper(काली मिर्च)
* Green Chili(हरी मिर्च) - 1
* Ginger(अदरक)
* Garlic(लहसुन)
* Onion(प्याज़) - 1 big size
* Cashew Nuts(काजू) - 10 pieces
* Tomato(टमाटर) - 2 big size
* Salt(नमक)

For Gravy -
* Oil(तेल)
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च)
* Turmeric Powder(हल्दी पाउडर) - 1/2 tsp
* Coriander Powder(धनिया पाउडर) - 1 tsp
* Cumin Powder(जीरा पाउडर) - 1/2 tsp
* Garam Masala Powder(गरम मसाला पाउडर)
* Dried Fenugreek Leaves(कसूरी मेथी)
* Ground Paste(पिसा हुआ पेस्ट)
* Salt(नमक)
* Black Salt(काला नमक)
* Sugar(चीनी) - 1/2 tsp
* Curd(दही) - 1 serving spoon
* Water (पानी)


Take a pan, put some Oil, Cumin Seeds, Cinnamon Stick, Cloves, Green Cardamom, Black Pepper in it. Then put some Green Chilies, Ginger, Garlic and Onion and saute them.
Then put some Cashew Nuts, Tomatoes and Salt and let them to be cooked by covering it. Then turn off the flame and keep it for cooling down and then grind it.
Grate some Cottage Cheese and put some All Purpose Flour and some Black Pepper Powder in it and bind its dough. Divide the dough in 3 parts and make the dough balls.
Put a Silver Foil on the rolling board, dust some All Purpose Flour and take a dough ball and roll it. Then cut its edges and apply some Tomato Ketchup on it. Put some finely chopped Coriander Leaves, Black Pepper Powder and some Chaat Masala on it. Cut the rolled Cottage Cheese in 2 parts and carefully make the rolls. In the same way, make other rolls as well.
Then take a pan, put some Oil in it and turn the flame slow. Put some Kashmiri Red Chili Powder, Turmeric Powder, Coriander Powder, Cumin Powder, Garam Masala Powder and some Dried Fenugreek Leaves. Roast them all and put the ground paste in it.
Turn the flame high. Put some Salt, Black Salt, some Sugar and after sometime put some whisked Curd in the gravy and stir it and then let it to be cooked till it releases fat.
Then put some Cottage Cheese Rolls in the gravy and again cover it for 2-3 mins on slow flame. In this way, Paneer Rolls with Orange Gravy will get ready to serve.
