हलवाई जैसी बेड़मी और आलू की सब्जी बनाने की आसान विधि | Urad Dal Bedmi/Bedai | Aloo Ki sabzi Recipe

For Bedai(बेड़ई):-

* Urad dal (उड़द दाल) - 1 bowl

* Asafoetida Powder (हींग) - 1/2 tsp

* Fennel seeds (सौंफ) - 2 tsp

* Garam Masala (गरम मसाला) - 1 tsp

* Raw mango powder (अमचूर पाउडर) - 1 tsp

* Red chili powder (लाल मिर्च) - 1 tsp

* Salt (नमक) - as per taste

* Black Salt (काला नमक) - 1/4 tsp

* Black pepper (काली मिर्च) - some

* Water (पानी) - 1 bowl

* All purpose flour (मैदा) - 1 cup

* Wheat flour (गेहू का आटा) - 1 cup

* Semolina (सूजी/रवा) - 1 cup

* Kasuri Methi (कसूरी मेथी)

* Carom seeds ( अजवाइन) - 1/2 tsp

* Salt (नमक)

* Refined oil (रिफाइंड आयल) - 3 tsp

* Ghee (घी) - 1 tsp

* Water (पानी)

* oil (तेल) - for frying

For Sabzi:

* Oil (तेल) - 3 tbsp

* Cumin (जीरा) - 1/2 tsp

* Bay leaf (तेज पत्ता) - 1

* Dry Whole Red Chili (सूखी साबुत लाल मिर्च) - 2

* Asafoetida (हींग) - 1/4 tsp

* Green chili (हरी मिर्च) - 2

* Ginger (अदरक) - 1-1.5 inch

* Turmeric powder (हल्दी पाउडर) - 1/2 tsp

* Kashmiri Red Powder (कश्मीरी लाल पाउडर) - 1 tsp

* Tomatoes (टमाटर) - 2

* Roasted gram flour (भुना हुआ बेसन) - 2 tsp

* Freshly ground black pepper (काली मिर्च पाउडर) - some

* Clove powder (लौंग पाउडर) - 1/4 tsp

* Coriander powder (धनिया पाउडर) - 1 tsp

* Potato (आलू) - 1/2 kg boiled

* peas (मटर) - 1 bowl

* Water (पानी) - 2 glasses

* Salt (नमक)

* Garam Masala (गरम मसाला) - 1 tsp

* Mango powder (अमचूर  पाउडर) - 1 tsp

* Black Salt (काला नमक) - some

* Dried fenugreek leaves (कसूरी मेथी) - some

* Coriander leaves (धनिया पत्ती) - some


For Bedai Masala, wash some Urad Dal and wipe it with a towel and then roast it. Grind it
Put some Asafoetida, coarsely grinded Fennel Seeds, Garam Masala Powder, Mango Powder,
Red Chili Powder, Salt, Black Salt and Black Pepper Powder in it and mix them
You can keep this masala in a jar for long time use.
Take some of the Masala, put water gradually in it and mix it. Keep it aside for 10-15 mins.
After 10 mins, if the filling gets too dry then you can put some more water in it.
Now take some All Purpose Flour, Wheat Flour and Semolina in a bowl. Put some Fenugreek
Leaves, Carom Seeds, Salt, Refined Oil and Ghee in it and bind the dough.
Neither the dough should be too tight and nor it should be too soft and keep it
aside for 30 mins.
After 30 mins, make some small dough balls and also make the balls of filling.
Now take a dough ball and press it with hands. Put a small ball of Filling on it and cover
it properly and press it lightly and roll it with the rolling pin then fry it
in the medium heated Oil and keep the flame medium. In this way Bedai will get
For Sabzi or Curry, Take a pan having thick base. Put some Oil, Cumin Seeds, Bay Leaf, Dried
Whole Red Chilies, Asafoetida in it.
Then put some finely chopped Green Chilies, grated Ginger, Turmeric Powder, Kashmiri Red
Chili Powder and some grinded Tomatoes.
When theTomatoes get cooked and releases Oil, put Roasted Gram Flour in it and roast it
with the masala and then put some Black Pepper Powder, Cloves Powder, Coriander
Powder and when the masala gets roasted properly then put Boiled Potatoes by
mashing them with hands and some Peas.
Put some Water and Salt in it and let it to be cooked. After 5-7 mins, put some Garam
Masala Powder, Mango Powder, Black salt, Dried Fenugreek Leaves and mix them
all.Then garnish it with some Coriander Leaves and cover it.
In this way Bedai and its Sabzi will get ready.
