उँगलियाँ चाटने पर मजबूर करेगा ये बैंगन का भर्ता, इस नए तरीके से बनाये बैंगन भर्ता  | Baingan bharta

Ingredients:-

* Eggplant/aubergine/ brinjal/baingan (बैगन) - 1 big size

* Mustard oil (सरसों का तेल) - 2 tbsp

* Cumin seeds (जीरा) - 1/2 tsp

* Cinnamon (दालचीनी) - 1 piece

* Cloves (लौंग) - 3 pieces

* Small cardamom (छोटी इलायची) - 1 small piece

* Red chili whole(साबुत लाल मिर्च) - 2 pieces

* Curry leaves (करि पत्ता) - some quantity

* Garlic (लहसुन) - 8-10 pieces

* Onion (प्याज) - 2 medium size

* Asafoetida powder (हींग पाउडर) - 1/4 tsp

* Ginger (अदरक ) - 1-1.5 inch

* Green chili (हरी मिर्च ) - as per taste

* Tomatoes (टमाटर) - 2 big size

* Kashmiri red chili (कश्मीरी लाल मिर्च) - 1 tsp 

* Salt (नमक) - as per taste

* Coriander powder (धनिया पाउडर) - 1 tsp

* Turmeric powder (हल्दी पाउडर) - 1/2 tsp

* Chili powder (लाल मिर्च पाउडर) - 1/4 tsp

* Garam masala powder (गरम मसाला पाउडर) - 1/4 tsp

* Curd (दही) - 1/2 cup

* Dried Fenugreek leaves (कसूरी मेथी) - some quantity

* Green coriander (हरा धनिया) - for garnishing

For smoky flavor

* Raw coal (कच्चा कोयला)

* Ghee (घी)



BAINGAN BHARTA RECIPE:

Peel the Brinjal and chop it in small pieces. Put the pieces in the water bowl.

Keep a pan on the flame and put 2 tbsp of Mustard Oil in it.

Put some spices:

½ tsp Cumin Seeds, 1 piece of Cinnamon Stick, 3 pieces of Cloves, 1 piece of Small Cardamom, 2 Dried Whole Red Chilies and some Curry Leaves.

Then, Put finely chopped 8-10 buds of Garlic, 2 chopped Onions

When it gets roasted slightly, put some finely chopped Ginger and 2 small sized Green Chilies (According to the taste).

Let them to be cooked for sometime.

When the Onion turns golden, Put 1 tsp of Kashmiri Red Chili Powder and 2 grated Tomatoes in it.

Then put the chopped pieces of Brinjal and put 1 tsp of Salt to make the Brinjals soft.

Turn the flame medium and cover it with a lid for 8-10 mins.

After 8-10 mins, Brinjals will get soft.

Now we will put some more Spices:

1 tsp coriander Powder, Salt as per the taste, 1/2 tsp Turmeric Powder, some Red Chili Powder and some Garam Masala.

Now turn the flame high and take out the cinnamon stick from it.

Take a Masher and mash it properly.

Now we will put a secret ingredient that makes the recipe tastier

Put 1/2 cup of Curd in it and mix it well.

Then again cover it and turn the flame medium and let it to be cooked with Curd for few mins.

After few mins, Put some Dried Fenugreek Leaves and then garnish it with some Coriander Leaves.

At last, for giving the Baingan Bharta a smoky flavor, we will place a small bowl in the center and put a heated coal and some Pure Ghee in the bowl.

Then cover it with the lid for 5 mins and turn off the flame.

After 5 mins, take out the bowl and put the Ghee in the recipe for making it more flavorful.

The Baingan Bharta is ready to serve now.
