namaste , welcome to masala kitchen.
today we will make garam masala.
Garam masala should be home made because don't what kind of
ingredients are added in the market.
therefore we can't get the suitable garam masala according
to our requirement.
therefore i am making garam masala at home which is pure and
full of fragrance.
for garam masala we need 3 to 4 Tbsp cumin seed ,
2Tbsp dry coriander , 2 Tbsp black paper , 5 nos black mace
, 4 to 5 cinnamon , 6 to 7 bay leaf , 10 to 15 cloves , 25 cardamon , 1/2 nos
nutmeg (for fragrance)
what we have to do is dry all these in sunlight for one day
or keep in pan heat it for 3 to 5 min so that its moisture content gets dry. if
you have oven , i that also you can keep them for 1 min.
we have stirred it on a medium flame in pan since it is bit
hot , let it cool.
now , we will grind it , some people prefer to add fennel
seed , but i don't prefer because fennel seeds have different flavour you can
add.
now you can grind it
you can see it is of brown color many times in market it is
of red color but it shouldn't be red , it should be brown.
you can store it in air tight container make sure it
shouldn't come in contact with wet spoon.
